SIP DEFINITION
SIP stands for Session Initiation Protocol. SIP is the standard protocol that provide transport of voice and video over a data network.
WHAT IS A SIP TRUNK
The easier way to think of SIP Trunking is that it replaces your existing analog or PRI phone lines connected to your PBX. SIP does this by connecting your on location phone system to your VOIP phone company via an Internet connection.
Wikipedia defines SIP Trunk as “SIP trunking enables the end point’s PBX (Private Branch Exchange phone system) to send and receive calls via the Internet.”

SIP TRUNK DIAGRAM
A business that has an existing working phone system can simply order SIP Trunks to replace their existing phone lines from the local telephone company. A On-Premise PBX will have either a SIP card that will allow you to directly connect a Internet connection to the system, a PRI card that will allow for up to 24 calls to be handled or a traditional analog card that will only allow calls based on its ports (usually 6, 8 or 12). A phone system with a SIP Card will just need to be programmed to match the SIP Providers settings. A PBX with either a PRI or analog card will need a device called an ATA that will convert the signal to a digital connection.
In the above diagram a employee picks up their phone to call a client. The phone in turn talks to the PBX which selects an outside line (a SIP Trunk) and places the call via the Internet connection. The employee and client speak just as they would with or without the SIP Trunk setup. Call quality of SIP Trunks are often better then traditional POTS lines as some existing analog phone lines have been buried in the ground for a long time and are breaking down.
